Adventures in polenta

So recently I’ve decided to venture away from my strict mexican food/cajun food diet and try a few new things.  I got some simple recipes for stuff with polenta, because it looks fucking nasty so naturally I wanted to try it.  I made these little sandwichy things first, by frying the polenta in a few drops of olive oil and sticking some fontina cheese in the middle.  I put a little sprinkle of shredded parmesan to make it look more appealing:

The second thing I tried was baking the slices with pasta sauce, a dollop of ricotta, and some more parmesan sprinklies:

While both were visually appealing, I couldn’t get over how much the polenta tasted like cornbread that had been smooshed in a plastic bag with cups of water.  Wait, that… but somehow all the salt and overall tastiness was sucked out of it first.  It wasn’t terrible, but it wasn’t particularly good, either.  

Needs salt.
